the next wave

during the month of january we’ll be celebrating veganuary by bringing a new wave of vegan innovation to our wagamama benches with a brand new plant-based dish | the vegan ‘suika’ tuna

this dish is available in january only, so our guests will need to catch it while they can

last year we launched the world’s first vegan egg and this year we’re pushing the vegan boat out even further with another iconic pan asian offering

what is our new wave? we have worked with japanese illustrator yuko shimizu to recreate ‘the great kanagawa wave’ which will be used across campaign collateral 

‘suika’ means watermelon in japanese. the vegan ‘tuna’ is made with dehydrated watermelon which is then sliced, seared and served hot

the look and texture is incredibly similar to tuna

the ‘tuna’ is dressed with a miso sesame sauce and sits on a bed of white rice which is dressed with soy seasoning and accompanied with pickled radish, kale and tenderstem broccoli. the dish is served with an avocado, edamame and tofu guacamole
